Grapes for this wine were sourced from a single vineyard in the high altitude area around the small town of Vita in the province of Trapani, Sicily. The grapes were hand harvested, sorted and crushed before being fermented in stainless steel. Temperature controlled fermentation started naturally with native yeast. Once the fermentation was complete, the wine was basket pressed. 30% of the wine was aged one year in new French oak barrique from wood from Allier (made by Licausi, one of the last remaining coopers in Marsala). The rest of the wine is kept in stainless steel tanks. The wine is unfiltered.
This is the first official vintage of the Zito family adventure.
