Vigno is a collaborative project from growers in Maule to rediscover and protect the region’s traditions producing dry farmed Carignan. Tiny yields are achieved from Emiliana’s 70 year old Organic Carignan block in Cauquenas, and the brooding, concentrated fruit is gently treated so as not to extract too much tannin.
Made with grapes from the Fundo San José vineyard , 280 km south of Santiago in the Maule Region. The vineyard is 115 m asl, ungrafted, dry-farmed, and head-trained with a north-south orientation. The grapes were manually harvested into 10kg boxes and transported to the winery. Upon arriving at the winery, the grapes were deposited on conveyor belts for a double selection, both before and after destemming. Vinification began with a 3-day pre-fermentation cold soak at 8ºC. Alco-holic fermentation took place in stainless steel tanks with native yeasts at 26ºC with a program of pump-overs determined by enological criteria. Malolactic fermentation took place naturally in French oak barrels as the wine aged for 10 months under tempe-rature-controlled conditions. The wine was neither fined nor stabilized and was only lightly filtered using 1-micron cartridges prior to bottling. The wine was aged for 10 months, 70% in first- and second-use oak barrels, and the rest in stainless steel tank.
Bright ruby red with high aromatic intensity and aromas of raspberries and blueberries and liqueur-like notes that intermingle with spices such as cloves and black pepper. The palate presents re-freshing acidity and medium body with firm but well-integrated tannins.
Pairs very well with lamb, roasted red meats, and aged cheeses.
