The Pais is harvested in Portezuelo and is called 215BC as Pais was recorded in Chile 215 years before Cabernet Sauvignon was documented for the first time in Bordeaux.  The fruit is grown and harvested by hand and horse.  The grapes are pressed manually and fermented in open-top tanks with native yeast.  The wine is aged in very old barrels over a single winter.   Although the grapes come from different vineyard sites, they are all fermented together.  If the grapes from the different sites are not ripe at the same time, then the grapes are simply added to the fermentation tanks at different times.  This winery wanted to showcase the beauty of the grapes being grown by traditional farmers and always give them a fair price for what they produce.
Fresh, floral with cruchy red fruit aromas prominent. Strawberry, cranberry and raspberry.
