The grapes are crushed, pressed and chilled then returned to the press to dissolve the crystallised sugars from the skins for extra intensity and flavour weight. This wine was matured for 8 months in new and one year old French barrels adding background vanilla and length. Meticulous about quality, Keith uses Chateau d'Yquem as a benchmark for his botrytis Semillon.
Lovely aromas of ripe apricots, sweet citrus and cool marzipan with some botrytis influence. A refined palate of citrus flavours, wild honey and pear characters with a delicious rich custard sweetness offset by clean and long lingering acidity, this is exotic wine with concentration and immense class.
Pair with Roquefort cheese, tarte tatin and sweet pastries.
