Organic viticulture demands precision and consistency. At La Commanderie de la Bargemone we monitor our processes closely all year round, both in the vineyard and the winery. Our grapes are harvested at night to preserve freshness.

The grapes are cooled again and pressed. The musts are then vatted and cold-soaked for five days at temperatures of 2°C, before commencing fermentation at 16°C. Each variety is vinified separately. Wines are blended in December and bottled early the following year.

Intense floral aromas with a fresh, mineral edge.
