How can it be so good? The secret is Harriet Bond, the 8 year old daughter of Lindsay and Karl who leads the way on their foraging trips into Macclesfield Forest to find the juicy bilberries and ripe raspberries they use as some of the botanicals in this small batch gin. It's a complete family experience with the family Bond team grinding the ingredients by hand in a pestle and mortar before being distilled in a small, traditional copper pot still where they only make a maximum of 85 bottles at a time! Wow!
This is a gin you could easily drink as a sipping gin as it's so smooth with a traditional backbone of juniper and coriander, but then there is an unrivalled softness from the foraged fruits and flowers. It's stunning. It really is. If you're making a G&T, only use the best Tonics with Forest. Using supermarket or Schweppes will completely over-power the delicate nuances the family Bond have worked so hard to create. Give it the respect it deserves.
