Following in the footsteps of her parents, Eve Grossot has now taken charge at this family domaine.
Eve has chosen to continue the estate's focus on expressing the wonderful terroir of their land whilst translating this into more elegant, fine examples of Chablis. Following organic practices, her sights are set on all vineyards being fully certified organic by 2019. The wines have mouth-watering minerality and a wonderfully pure, appley fruit that electrifies the palate, whilst retaining a considerable richness for Chablis.
Parcels of vines from the village of Fleys as well as the communes of Chichee and Fontenay totalling 13 ha. They are mainly north or north west facing on kimmeridgien soils made up of limestone and clay. The oldest vines are about 35 years old.
After gentle cold settling, the must is put in tank where it goes through alcoholic and malolactic fermentation. It then spends a long period on its lees to refine the aromas and develop complexity. If needed the wine is fined with bentonite to take out the proteins and they use cold stabilisation to remove tartaric crystals. The wine is bottled 10 months after the vintage.
All the skill of Jean Pierre Grossot is clearly demonstrated in this brilliant Chablis. Mouth-watering minerality and wonderfully pure appley fruit, this electrifies the palate and has considerable richness for Chablis - a stunner!
Fantastic with kinds of raw shellfish, especially oysters. Simply cooked shellfish dishes such as spaghetti alla vongole or moules marinières.
