Vines are trellis trained in the Vertical Shoot Positioning system on a North facing slope, on sand and brown loam soils. Organic principles are at the heart of everything Garagiste do.
The grapes underwent 100% whole-bunch fermentation for 22 days. After maturation in old oak for 9 months, the wine was bottled unfiltered and with only minimal sulphur.
This crackles with smoky spice, lifting from the glass with notes of cracked pepper, chilli seeds, tarragon, celery salt, bison grass, wet rocks, the first smoulder of lit autumn leaves and nuances of sweetly smoky fig backed up by a dry-toned cassis note. The palate has a lightly glycerol-like feel that is structured by chalky phenolics and relatively gentle but apparent acidity.
Great with roast partridge and other game.
