What is Mead? Mead is an alcoholic drink of fermented honey and water! However, not all meads are created in the same manner. Known as the drink of the Gods and in modern memory, associated with the Vikings, mead is now also produced using base alcohol, white wine or sugar syrup, with honey added at a later stage.

This mead is a ‘Metheglin’ (herbed honey mead), using Blossom honey. It has freshly made elderflower cordial added to the fermentation process. The elderflowers are picked by hand from a lovely spot just a hop, skip and a jump away from the meadery. Within 24 hours, they are de-stemmed and boiled into a cordial which is then added to the honey to begin fermenting. The addition of elderflowers gives it a smooth and floral taste that has converted a number of non-elderflower lovers! This flavour is a firm favourite with drinkers of gin, elderflower wine and champagne.
