The vineyard is 35 years old located on small hills facing the Mediterranean sea with a soil made of clay and limestone. Parcels of grapes are fermented separately. The whole vinication process takes place in chai (cellars) for a minimum of one month. Direct pressing is done for the whites with short maceration on skins to increase aroma in the nished wine. The alcoholic fermentation is always done in temperature-controlled vats, between 13° and 16°C. No maloctic fermentation for the whites in order to keep the acidity. No oak is used in order to preserve the primary characteristics.
The Pas d'Histoire Blanc 2017 has a yellow colour with green highlights. The nose is complex with citrus aromas and white ower notes, followed by a rich mouthfeel with great balance of freshness from acidity.
