The vineyard is quite young, at 30 years old, with a soil of clay and limestone and benets a Mediterranean climate. Done with a classic vinication process where, over the course of a month, the juice is macerated with the skins in order to extract the aromas, tanins and colour. The fermentation is done in temperature controlled vats, between 14 and 16°C and usually lasts for about 3 weeks. Malolactic fermentation was used in order to stabilise the wine and also to lower the acidity. Usually this fermentation happens naturally but sometimes if the conditions are not met we can use juices from another vat . No oak is used in order to retain primary characteristics.
The Pas d'Histoires Red has a clear red colour with purple tints. It develops a nice fresh nose on notes of red fruits and berries. The mouth is light with no tannins, which makes it very easy to drink and to go with food.
