A dry wine full of zing and flavour.
The vines are situated in the Entre-Deux-Mers area of Bordeaux and cover an area of 50 hectares. The soil is clay-limestone and the vines are 25 years old. Grapes are picked, sorted, destemmed and crushed and sent into maceration tanks for between 24 hours and 48 hours at low temperatures before being pressed. The free run juice is then left to settle for 24 hours before clear juice is taken off the heavy lees. The clear juice is pumped into fermentation tanks where selected yeasts are added and the wines are left to ferment at a low temperature (15°C to 18°C). At the end of the process, there is no or very little sugar left (maximum of 2g per litre) and the wine is left to settle for 4 or 5 days before being transferred into a maturation tank where it will be left on the fine lees for several months. The wines are then racked and left to age for 3 to 8 months before bottling.
Clean, fresh, zesty, limey nose with a tropical Sauvignon Blanc, kiwi fruit and grapefuit palate with good body and some weight in the finish. A well made, light bodied, fresh, dry white from Bordeaux.
Fantastic with oriental cuisine, seafood salad, pasta or goats cheese.
