A traditional style of Tuscan Vin Santo of extraordinary complexity - aged for six to ten years in small barrels.
Produced in the Chianti Rufina Area, 25 km from Florence. Clay soil, with Colombino stone. Harvested mid-September to mid-October. This Vin Santo is made in the best years only. The grapes are selected directly from the vineyard and are then hung from the rafters to dry - from the harvest until December. Vin Santo is sealed into "Caratelli" for a long time, ranging from a minimun of six years to a maximun of ten and only then is it bottled.
A wine with a very deep yet bright, golden colour and amber highlights. Subtly eccentric aromas introduce immediate interest - there is a soft honeyed central note with a sweet raisiny, figgy heart. This extends further with age developed nuances such as spices, old furniture, cocoa, chestnuts, and creme caramel. The wine has a very mellow and comfortable feel in the mouth - rich and sweet, yet tangy and orange-peely - giving support to a long and fine finish.
Serve with Tuscan cantuccini biscuits. Also an excellent aperitif when chilled, or ideal with aged cheeses.
