For the needs of the hospital, the Superior of the Order, Father Edmond Lefébure, had a sugar refinery built next door, at the place called “Trou Vaillant”. True to tradition, the sugar refinery led to the creation of a vinegar factory where the molasses residues were distilled to obtain “guildive” or “tafia”. Father du Tertre and Father Labat, both eminent botanists, had already worked on the distillation process and had stills brought over from France to improve the quality of these rather rustic alcohols which were the stuff of pirates and servants.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eSaint James VSOP \u003c\/strong\u003eis an aged agricole rum produced in accordance with traditional Caribbean methods. It offers a balanced and complex profile with notes of caramel, vanilla, oak and gentle spice, alongside a soft, velvety texture. A refined example of Martinique agricole rum, recognised for its richness and depth.\u003cbr\u003e\u003cbr\u003eNOSE: Cocoa and spicy attack supported by a fine and vanilla woodiness. Then the candied and macerated fruits are revealed.\u003cbr\u003ePALATE: The roasted notes blend remarkably with spicy ones (vanilla, cinnamon).
