This wine is produced from grapes grown on one hectare of vineyard on a premier cru site. The 50 year-old vines are south-east facing and grown in clay/ limestone soil.
Picked by hand, the grapes are sorted in the vineyard. The bunches are completely destemmed before pressing. Fermentation occurs on the skins for 15 days. After racking and pressing the wine is aged in oak barrels for 11 to 12 months. 50% new casks, the rest is one or two years old.
This is a very fruity wine with aromas of red berries, ripe black fruit (blackberries), wild berries and blackcurrant. Drink with a chicken on a bed of potatoes, or duck breast.
