This new release from Cavit is a fine, linear style of Pinot Grigio - the result of a selection of their best quality low-yielding fruit from Cavit’s highest altitude vineyards above the Garda Lake. The grapes benefit from a south, south-west exposure from a long summer and a sunny, warm September. Harvest takes place at the end of September, when the grapes reach a perfect level of maturation. This results in a balanced Pinot Grigio Superiore, with fruity aromas and a refreshingly spicy minerality.
Cavit Rulendis Pinot Grigio wine has beautiful aromas of honeyed, ripe stone fruit with citrus and lightly spicy notes. The palate is complex with lime, citrus characters balanced by a spicy minerality, structure and length. Showing some development, but with the potential to age for 5 years or more.
A great match for fish dishes, including 'baccalà alla vicentina' from Veneto.
