A very fine, dry and properly Meditarranean-scented rosé.

The 57 hectare Domaine de Rimauresq lies near the town of Toulon in the foothills of the Maures Massif, on north-facing slopes, which ensures the vines are protected from the intense Mediterranean sun. A combination of mechanical and manual fruit harvesting is carried out during the early morning to benefit from the cool nighttime temperatures. Bunches are crushed and de-stemmed, then the grapes undergo cold maceration on their skins for several hours prior to fermentation at a low temperature. The grapes are pressed and the free run juice separated. Subsequently, it undergoes a period of cold stabilisation prior to fermentation at a low temperature for two to three weeks.After fermentation, the wines are left on their lees for three weeks with regular 'batonnage', improving the aromas. The wines do not undergo malolactic fermentation so as to preserve their acidity. Finally, the wines undergo a period of cold stabilisation prior to filtering and bottling. Neither the rosé nor the white wines are matured in oak. The result is a gorgeously aromatic and light wine with good acidity that can be cellared up to three years.

Ultra pale in colour, clean and fresh on the nose and the palate. The flavours are full of character and charm with just a hint of spice and good length.

Fantastic as an apéritif or with lobster and grilled fish.
