The Fabre Family have been producing wine in one way or another for over four hundred years. In 1711, the family settled in Gasparets, near Narbonne, in the Aude department of France. Louis Fabre is head of the family concern, which now includes five estates, having taken the reins in 1982. From 2014 he has been joined by a new generation, his daughters and niece: Clémence, Paule and Jeanne, respectively in charge of export sales, accounting and oeno-tourism.

Since 1991, Famille Fabre has been converted to organic viticulture and today 100% of its vineyards are certified organic, producing concentrated, flavoursome wines with genuine provenance.

Chateau Fabre-Gasparets Viognier Chimere IGP Pays d’Oc organic wine has an intense nose of candied citrus and peach. A highly concentrated palate with a lovely freshness. Notes of candied lemon and roasted almonds. The finish has a good and pleasant length. Lovely with sea-food and grilled white fish.

Château Fabre Gasparets Viognier Chimère IGP Pays d’Oc: “A whiff of nutty oak pervades over citrus and floral aromas. Evident oak provides gentle vanilla weight, beautiful structural creaminess, butterscotch and butteriness. The fruit is silky and round with hints of white chocolate, oranges and cooked peaches. The acidity is perfectly balanced, with heavy phenolics and tannins on the finish. Beautifully put together, but maybe needs a little more time to soften the oak.
