A new producer from Rio Itata, CoPa Wines is a tiny project solely focussing on old Itata's ancient vineyards, the oldest in Chile, from a clutch of small family growers brought together into the CoPa family of small ferments and tiny volumes.
The first wines produced in Chile were made with País grapes during the 1550s and was Chile's primary wine grape until the introduction of Bordeaux varietals in the late 20th Century.
This 100% Semillón is sourced from small 120 years old vineyard located in Güarilihue, Itata Valley. The vines are bush trained, dry farmed and no rootstock. The soil profile is granite rock with moderate amounts of quartz. Grapes are hand harvest in small boxes of 15 kg. The grapes were destemmed and gently pressed over six hours, with the juice then settled in a stainless steel tank. After 24 hours of decanting, the must and selected lees were transferred to 300 and 500 litre French oak barrels for fermentation. The Semillón was aged for thirteen months in both new and used French oak, and then bottled and rested for six months before release.
CoPa Semillon wine has a wide range of aromas, such as honey, peach, green herbs, dried fruit and gunpowder. It is a structured Semilón, medium bodied with mineral and a saline touch on the palate. A balanced and complex wine with a long and elegant finish. Pair with seared tuna salad.
