As if Jura wasn’t trendy enough, winemaker Damien’s only gone and upped the ante by producing a no added sulphite Chardonnay.
The fruit comes from 50-year-old vines and the winemaking story is one of less is more… The wine is fermented and aged in new oak foudres but with minimal toast, with no filtering, no added sulphites and no racking this is essentially left alone for its formative years.
Domaine Desire Petit Chardonnay Le Grapiot Sans Sulfites AOP Arbois is very fresh, precise and tidy this is a great example of a wine on the natural spectrum. Fruit, minerality and subtle oak all in perfect harmony.
As an apéritif, with fish tartare or sashimi, plateaux des fruits de mer, or creamy shellfish-filled vol au vents.
