Francesco Follador is a small, family producer of Prosecco based in Valdobbiadene. A donkey features on their wine labels as a symbol of their hard work, patience and obstinance to continue to grow grapes in the most difficult areas where the slopes are steep and the land demands a lot of manual labour. Their efforts are paid off by the quality of their Prosecco which showcases the purity of their fruit.
This is Follador's 'col fondo' sparkling wine. It is a lightly sparkling cloudy ancestor to the modern-day Prosecco. As this wine does not go through filtration, all the wonderful flavours are retained...expect yellow apple, pear, acacia flower, bread crust with a delicate burst of citrus and minerality. Wonderful as an aperitif or with white fish.
