The Bobal grapes, indigenous to south-east Spain, are cultivated in loam soils which are rich in red clay. Yields are controlled and organic practices employed. Bobal ripens a little later than other varieties typically used to make light and fruity reds and rosés - and only a very careful selection of the best grapes in Camporrobles, in D.O. Utiel-Requena, are used for Pasión de Bobal Rosado. The grapes are macerated for 16 hours, and the free run juice is fermented - both at low, controlled temperatures to maintain freshness and aromas.
Pasion de Bobal Rosado is a pretty, pale rosado from south-east Spain's indigenous Bobal variety. Pale, 'Provence-style' pink in colour with fresh strawberry, redcurrant and white flower aromas with a hint of rose. Nicely-balanced with clean, bright acidity, some minerality adding palate weight, and red berries and cream on the finish. A stand alone aperitif or perfect for salmon or chicken salad.
